Ingredients

  • 2 cups thalipeeth bhajani (roasted jowar, bajra, rice, wheat, chana dal, urad dal, coriander and cumin, ground)
  • 1 onion, finely chopped
  • 2 tbsp chopped coriander
  • 1 tsp red chilli powder
  • ½ tsp turmeric
  • 1 tsp sesame seeds
  • Salt to taste
  • Water as needed
  • Oil or ghee for cooking
  • White butter or curd to serve

Method

  1. Mix the bhajani with onion, coriander, spices, sesame and salt.
  2. Add water little by little and knead a soft, sticky dough.
  3. Grease a piece of plastic sheet or banana leaf. Pat a ball of dough into a thin round with wet fingers and make 4–5 holes in it.
  4. Turn it onto a hot tawa, pour a little oil into each hole and around the edges. Cover and cook on medium heat.
  5. Flip and cook the other side until crisp and brown.
  6. Serve hot with white butter, curd or thecha.

History

Bhajani is a traditional Maharashtrian flour made by roasting grains and pulses before grinding, which also helps it keep for weeks.

Significance

Thalipeeth is a nourishing, high-fibre meal that uses whatever grains a home has, and is a favourite with fresh white butter.
